Ingredients for 4 people:
For the sauce:
- 125 g peanuts, peeled
- 1 cooked potato
- 2 red chilli peppers
- 2 shallots
- 1 clove garlic
- 8 almonds
- Lime or lemon juice
- 200 g coconut milk
- 1 tbsp brown sugar
- Salt
- Optional:
- Ground cumin
For the chicken:
- 2 clean chicken breasts
- Soy sauce
- Lime or lemon juice
Preparation:
- Prepare the satay sauce:
- Toast the peanuts on the No Fat Grill.
- Wrap a thinly sliced potato in aluminium foil and cook on the No Fat Grill for 8 minutes or until soft.
- Soak the chillies in hot water for approximately 30 minutes.
- Mix all the sauce ingredients together. Optionally, season with a little cumin.
- Cut the chicken into large cubes. Marinate them in half of the soy sauce and lemon or lime juice for a couple of hours.
- Skewer the chicken and grill on the No Fat Grill until cooked (depending on cube size, 4-6 minutes).
- Serve the chicken skewers with warm satay sauce.
