Ingredients for 4 people:
- 1 kg pork ribs
- Salt and pepper
For the marinade:
- 175 g pure maple syrup
- 1 tsp chilli sauce (optional, Tabasco sauce)
- 1 tbsp Worcestershire sauce
- 1 tbsp black wine vinegar
- 1 onion, finely chopped
- ¼ tsp dry mustard
Preparation:
- Season the ribs with salt and pepper and add the marinade ingredients after mixing them together first. Marinate in a covered container in the fridge for 12 hours.
- Drain the ribs.
- Reduce the marinade in a saucepan until it is creamy.
- Grill the ribs on the No Fat Grill for 6 minutes.
- Brush the top of the ribs with the reduced marinade. Cook for 1 minute. Brush the ribs again. Cook for another minute. Repeat until the top of the ribs is caramelized.
Tips
- The maple is the national tree of Canada. Its sap is processed to produce syrup, which is extraordinarily popular in Canada and has many different uses. Canadians of French origin are the main source of the country’s culinary history and also introduced pork, a traditional food for people isolated during winter because of heavy snow.
