Ingredients for 4 people:
- 8 lamb ribs
- Extra virgin olive oil
- 1 clove garlic
- Fresh rosemary leaves
- Fresh thyme leaves
- 1 small chilli
Ingredients for the sauce:
- 1 tbsp honey
- 1 tbsp balsamic vinegar of Modena
- 200 g orange juice
- 200 g meat broth
Optional:
- 1 grated cardamom seed
- Corn starch
Orange crisp:
- 1 orange
- 100 g sugar
- 50 g water
- Optional:
- Icing sugarĀ
Preparation of the sauce:
- Heat the honey in a saucepan and let it caramelize. Add the vinegar and let it evaporate.
- Add the orange juice and broth. Optionally, add the grated cardamom seed and reduce the sauce until it is creamy.
- You can thicken the sauce with a little corn starch.
For the orange crisp:
- Make a syrup by heating the water and sugar until it starts to turn brown.
- Cut the orange into very thin slices.
- Dip the orange slices into the syrup and cook them on the No Fat Grill until they are golden brown.
- Optionally, sprinkle them with icing sugar and keep them separate so they do not stick to each other.
- Crush the garlic with a little oil, a few rosemary and thyme leaves, and the chilli.
- Season the ribs with salt and pepper. Brush them with the herb mixture and grill them on the No Fat Grill for 4 minutes.
- Serve with the orange sauce and orange crisp.
