Ingredients for 4 people:
- 200 g cooked chickpeas
- 200 g cooked white beans
- 50 g okara soy pulp
- 50 g breadcrumbs
- 1 clove garlic
- 1 tsp chopped ginger
- 1 egg
- Cumin
- Salt and pepper
- Extra virgin olive oil
Preparation:
- Blend the chickpeas and beans until smooth.
- Add the okara and breadcrumbs.
- Season with garlic and ginger.
- Add the egg and a pinch of cumin and salt.
- Divide the dough into four parts. Shape each part into a ball, flatten it and brush it with a little oil.
- Cook the burgers on the No Fat Grill for 5 minutes, until lightly browned.
Tips
- How to prepare okara at home:
- Hydrate 200 g of white soybeans with water for 12 hours.
- Drain, rinse and add 1 litre of water and a pinch of salt.
- Blend well and cook for 1 hour on a low heat.
- Drain the soybeans. The resulting liquid is soy milk. The solid residue is soybean okara.
- If you add a little nigari (magnesium chloride) to the soy milk, the soy milk will coagulate. Strain it with a clean cloth and wringer and press down on it. The result is tofu.
