Ingredients for 4 people:
- 2 chicken breasts
- Salt and white pepper
Ingredients for aromatic butter:
- 50 g breadcrumbs
- 75 g creamy butter
- 25 g ground almonds
- 1 tbsp rosemary, finely chopped
- 1 tsp oregano
- 1 tbsp chopped parsley
- 1 tbsp finely chopped thyme
- 1 tsp chopped tarragon
- 1 pinch chopped chives
- 1 tsp chopped coriander
- Ground cinnamon, nutmeg
- 40 g egg whites
- Salt and black pepper
Preparation:
- Mix the breadcrumbs and creamy butter, ground almonds and a little of all the spices and chopped herbs. Add the egg whites and salt and pepper.
- Place this paste mixture between two pieces of parchment paper and roll it out well with a roller (if it’s very soft, put it in the fridge until the consistency is right for rolling). After rolling, store in the fridge to improve consistency.
- Remove any fat from the chicken breasts. Season with salt and white pepper.
- Separate the aromatic paste from the parchment paper and wrap the paste around the chicken to completely cover it. Place in the fridge to improve consistency again.
- Cook on the No Fat Grill for about 8 minutes.
Tips
- To soften the butter, leave it out at room temperature for a while.
